Breakfast No. 1

Ingredients

- 3 boiled eggs

- 3 pre-made hash brown patties (seasoned)

- 1 cup grated cheese

- Hot sauce, to taste

- 1 avocado, diced

- Leftover bean curry


Instructions

1. Preheat oven to 375°F.

2. Arrange hash brown patties on a baking sheet and bake for 15 minutes.

3. Meanwhile, slice boiled eggs and dice avocado.

4. Remove hash brown patties from the oven and top with grated cheese and hot sauce.

5. Reheat the leftover bean curry in a saucepan over medium heat.

6. When the bean curry is hot, spoon it onto the hash brown patties.

7. Serve with boiled eggs and sliced avocado.

8. Place baking sheet back into the oven for 5 minutes, or until cheese is melted and bubbly.

9. Serve hot. Enjoy!
